For a single 19–23L batch, use two sachets of CellarScience BAJA Mexican Lager Yeast x 12g. For larger batches, dose at 0.66–1.06g per litre of wort, or 70–100g per 100L.
When scaling up, CellarScience recommends rounding up by one full sachet rather than measuring the yeast too precisely. This helps ensure an adequate pitch rate and supports strong fermentation performance.

Direct Pitch Method
CellarScience BAJA Mexican Lager Yeast x 12g is designed to be sprinkled directly onto the surface of your wort.
- Chill wort to the correct fermentation temperature.
- Sprinkle yeast evenly over the wort surface.
- Ferment between 10–13°C.
- Follow your recipe and fermentation profile.
No initial oxygenation is required. This is possible because CellarScience uses an aerobic growth process that creates dry yeast with high viability and high sterol levels.
Rehydration Method
Rehydration is optional. However, some brewers prefer this method for larger batches or specific fermentation schedules.
- Sanitise the yeast sachet and scissors before opening.
- Use 10g of sterilised tap water between 29–35°C per gram of yeast.
- Add 0.25g of FermStart Yeast Nutrient per gram of yeast.
- Sprinkle yeast onto the water.
- Allow the slurry to stand undisturbed for 20 minutes.
- Swirl gently.
- Add small amounts of wort to bring the slurry within 6°C of wort temperature.
- Pitch into the wort.
