Crafted in Gippsland, this 17-litre fresh wort kit can be topped up to 21 litres for a balanced, easy-drinking result. Expect tropical fruit aromas, a soft mouthfeel, restrained bitterness and a naturally hazy appearance.

Recommended dry hops are Nectaron and Simcoe.

The Hazy Pale Ale Fresh Wort Kit – Mad Hopper Brewing gives homebrewers a simple way to produce a taproom-style hazy pale ale with vibrant hop aroma, a smooth body and a juicy finish. Professionally brewed and packed fresh by Mad Hopper Brewing, this ready-to-ferment wort removes the need for mashing, sparging and boiling.

Each kit contains 17 litres of fresh wort. You can ferment it at the supplied volume for a richer result or add clean water to reach a final volume of up to 21 litres. With a cube original gravity of approximately 1.060, the wort provides a strong foundation for a flavourful yet highly drinkable pale ale.

This beer is designed for both new and experienced brewers. Beginners can enjoy a more straightforward brewing process, while experienced homebrewers can customise the final beer through yeast choice, dry-hop quantity and packaging method.

Flavour and Aroma Profile

Expect a soft, juicy beer with vibrant tropical fruit and citrus character. The malt profile provides enough body to support the hops without becoming heavy, while the yeast and grain structure help create the smooth mouthfeel associated with modern hazy pale ales.

Nectaron dry hops can contribute bold notes of passionfruit, pineapple, peach and ripe citrus. Simcoe can add grapefruit, pine, stone fruit and subtle resinous character. Used together, they create a layered hop aroma with both tropical sweetness and a refreshing citrus edge.

The bitterness remains gentle and balanced. As a result, the finished beer should feel smooth and approachable rather than sharp or aggressively bitter.

Final alcohol content, body and finishing gravity will vary depending on the amount of water added, selected yeast strain, fermentation temperature and attenuation.

Recommended Yeast Options

Suitable yeast strains include:

  • Lallemand Verdant IPA
  • Fermentis SafAle S-33
  • CellarScience Hazy

Lallemand Verdant IPA is an excellent choice for creating a soft mouthfeel, stable haze and expressive stone fruit character. Fermentis S-33 can contribute fruity esters and a fuller finish, while CellarScience Hazy is designed to complement modern juicy and hazy beer styles.

Always follow the yeast manufacturer’s pitching rate and fermentation temperature instructions.

Recommended Dry Hops

The suggested dry-hop varieties are:

  • Nectaron: 50–100 grams
  • Simcoe: 50–100 grams

Use a lower quantity for a balanced pale ale aroma or increase the addition for a more intensely hop-saturated result.

Nectaron is ideal for boosting tropical fruit, passionfruit and peach character. Simcoe adds citrus, pine and depth. You can use either variety by itself or combine both to create a more complex hop profile.

Add the dry hops near the end of fermentation or approximately three days before packaging. Avoid excessive contact time, as this may introduce grassy flavours.

Brewing Instructions

  1. Clean and sanitise your fermenter, lid, tap, airlock and all equipment that will contact the wort.
  2. Transfer the full contents of the fresh wort cube into the sanitised fermenter.
  3. Add clean water if desired to reach a final volume of up to 21 litres.
  4. Mix thoroughly and aerate the wort before pitching yeast.
  5. Confirm the wort is within the correct temperature range for your selected yeast.
  6. Pitch the yeast according to the manufacturer’s directions.
  7. Maintain a stable fermentation temperature.
  8. Add Nectaron, Simcoe or a blend of both near the end of fermentation.
  9. Confirm fermentation is complete by checking for stable gravity readings over consecutive days.
  10. Bottle or keg using properly sanitised equipment.
  11. Carbonate, condition and serve fresh.

Brewer’s Tips

Minimise oxygen exposure when dry hopping, transferring or packaging. Hazy and hop-forward beers are especially sensitive to oxidation, which can quickly dull the aroma and darken the colour.

Avoid strong finings if you want to preserve the intended hazy appearance. A short cold-conditioning period may help settle coarse yeast and hop particles without fully clearing the beer.

This style is best consumed fresh while the hop aroma remains bright. Store the packaged beer cold and serve well chilled.
