The Japanese Rice Lager Fresh Wort Kit – Keg King gives homebrewers a convenient way to create a crisp, refreshing and highly drinkable lager with a light body and clean finish. Inspired by popular Japanese rice lagers, this fresh wort kit delivers balanced grain character, gentle hop bitterness and a bright pale-golden appearance.
Keg King generally produces these wort kits on a Speidel 500L Braumeister brewing system. Therefore, you receive professionally prepared wort without the time, equipment and cleaning required for a complete all grain brew day. Simply transfer the wort into a sanitised fermenter, add water, pitch your selected yeast and maintain the recommended fermentation temperature.
The Japanese Rice Lager Fresh Wort Kit – Keg King contains approximately 16.5 litres of concentrated wort. Add around 3 litres of clean water to create a final brewing volume of approximately 20 litres. The undiluted wort has a starting gravity of around 1.050, while dilution with 3 litres of water reduces the expected starting gravity to approximately 1.042.
Flavour and Aroma Profile
This rice lager offers a light-bodied and refreshing drinking experience. Pale Ale malt creates a clean foundation, while Carahell adds gentle malt character and balance. Rice helps produce the dry, crisp finish associated with this popular lager style.
Magnum hops provide approximately 20 IBUs of smooth bitterness. As a result, the beer remains balanced without tasting overly bitter or sweet. Expect subtle grain crispness, a mild hop zest and a clean finish that encourages another sip.
Its versatile flavour profile makes it a great match for many foods, including:
- Barbecued meats
- Seafood
- Crispy fried chicken
- Pizza
- Chips and salty snacks
- Spicy dishes
- Light summer meals

Recommended Yeast Options
For the most authentic lager character, choose a suitable lager yeast and maintain reliable temperature control.
Recommended options include:
- Bluestone Pilsen
- Bluestone Stuttgart
- Mangrove Jack’s M84 Bohemian Lager
- Fermentis SafLager S-189
- Fermentis SafLager W-34/70
- Fermentis SafLager S-23
W-34/70 and S-189 are excellent choices for a clean and crisp finish. S-23 may contribute slightly more fruity character, while M84 can produce a traditional European-style lager profile. Always follow the yeast manufacturer’s pitching and temperature recommendations.
Basic Brewing Instructions
- Thoroughly clean and sanitise your fermenter and all equipment that will contact the wort.
- Transfer the full contents of the fresh wort cube into the fermenter.
- Add approximately 3 litres of clean water to reach a final volume of around 20 litres.
- Mix well and confirm the wort is at the correct pitching temperature.
- Add your chosen lager yeast.
- Maintain a stable fermentation temperature within the yeast manufacturer’s recommended range.
- Allow fermentation to continue until the specific gravity remains stable over consecutive days.
- Bottle or keg the finished beer using sanitised equipment.
- Carbonate and condition before serving chilled.
For the cleanest result, ferment toward the lower end of your selected yeast’s recommended temperature range. Allowing additional cold-conditioning time after fermentation can also improve clarity and produce a smoother lager character.
Dry hopping is optional. However, a small addition of a mild citrus, floral or noble-style hop can add aroma without overwhelming the clean malt and rice profile.
The Japanese Rice Lager Fresh Wort Kit – Keg King is ideal for brewers who enjoy bright, easy-drinking beer with a crisp finish. It offers the quality of an all grain brew while reducing preparation time, mess and equipment requirements.
