Traditional Kölsch is a pale, highly drinkable beer with gentle malt flavour, restrained fruit character and subtle hop bitterness. Although it is fermented with top-fermenting yeast, it is commonly conditioned at cooler temperatures to create a clean and smooth finish.

After primary fermentation, a period of cold conditioning can help:
