The Yarraville Pale Ale Fresh Wort Kit – Keg King makes it easy to brew a fresh, hop-forward Australian-style pale ale without spending hours on a full all grain brew day. Professionally brewed and ready to ferment, this fresh wort kit delivers genuine craft beer quality while eliminating the need for mashing, sparging and boiling.
Designed as a highly drinkable session pale ale, this recipe balances a clean malt backbone with expressive Pacific Rim hop character. Australian Pilsner malt provides a crisp, refreshing base, while German Carahell malt adds a touch of body, light honey sweetness and subtle caramel complexity. The result is a balanced beer that is approachable enough for everyday drinking while still offering plenty of modern hop flavour.
Each cube contains approximately 16.5 litres of fresh wort. Add around 3 litres of clean water to create the recommended 20-litre batch with a starting gravity of approximately 1.046. Alternatively, ferment the wort undiluted for a fuller-bodied and slightly stronger pale ale.
Flavour and Aroma Profile
This pale ale is built around a vibrant blend of Citra, Galaxy and Kohatu hops. Citra contributes bright grapefruit, lime and tropical fruit flavours, while Galaxy adds passionfruit, peach and citrus notes. Kohatu rounds out the profile with hints of pineapple, citrus zest and soft tropical fruit.
The malt bill remains clean and restrained, allowing the hops to take centre stage. At approximately 14 IBUs, bitterness is intentionally low, creating a smooth and refreshing finish that encourages another sip.
The finished beer pours a bright golden colour with a lasting white head and an inviting tropical hop aroma.

Late hops:
- Citra
- Galaxy
- Kohatu
The simple malt bill provides a crisp foundation that allows the modern hop varieties to deliver maximum flavour and aroma.
Optional Dry Hopping
Dry hopping is not essential, as the wort already contains generous late-hop additions. However, if you would like to increase the hop aroma, add approximately 40 grams of Galaxy, Citra or Kohatu to the fermenter around three days before packaging.
Galaxy will emphasise passionfruit and peach, Citra will boost grapefruit and citrus, while Kohatu contributes bright tropical fruit and pineapple notes. You can also combine these varieties to create your own signature hop profile.
Recommended Yeast Options
For the cleanest fermentation and best hop expression, suitable yeast choices include:
- Fermentis SafAle US-05
- LalBrew BRY-97 West Coast Ale
- Mangrove Jack’s M44 West Coast Ale
- CellarScience CALI Ale Yeast
These clean American-style ale yeasts allow the hop character to remain bright while producing a crisp, refreshing finish.
Always follow the pitching rate and fermentation temperature recommendations supplied by the yeast manufacturer.
