Direct Pitch Method

  1. Cool wort to the desired fermentation temperature.
  2. Sprinkle the yeast directly onto the wort surface.
  3. No oxygenation is required during the initial fermentation stage.
  4. Ferment within the recommended temperature range.
  5. Allow fermentation to complete before conditioning and packaging.

The advanced aerobic growth process produces high sterol levels and excellent viability, making direct pitching simple and effective.


Rehydration Method

While direct pitching is recommended, rehydration can also be used.

  1. Sanitize the yeast sachet and scissors.
  2. Prepare sterilised water at 29-35°C.
  3. Use 10g of water mixed with 0.25g of FermStart per gram of yeast.
  4. Sprinkle yeast onto the water surface.
  5. Allow to stand undisturbed for 20 minutes.
  6. Gently swirl to form a slurry.
  7. Adjust slurry temperature to within 6°C of wort temperature before pitching.

Larger Batches:
Use at a rate of 0.5-0.8g per litre.

Commercial Dosage Rate:
50-80g per 100L

For larger brews, CellarScience recommends rounding up to the nearest full sachet rather than measuring partial amounts.
