- Clean water to make 10 litres
Do not add the 500g of dextrose when preparing the lower-alcohol version. The finished drink is approximately 0.7% ABV when brewed according to Coopers’ instructions.
General Brewing Instructions
Always follow the current instructions printed on the pouch.
- Clean and sanitise the fermenter, mixing spoon, lid, tap and all equipment that will contact the ginger beer.
- Add the brewing extract to the sanitised fermenter.
- For the alcoholic version, dissolve and add 500g of dextrose.
- Add clean water to make a total volume of 10 litres.
- Mix thoroughly until the extract and dextrose have dissolved.
- Check that the mixture is within the yeast’s recommended pitching temperature.
- Sprinkle the supplied yeast over the surface.
- Seal the fermenter and maintain a stable fermentation temperature.
- Allow fermentation to continue until gravity readings remain stable over consecutive days.
- Bottle using the correct number of carbonation drops for the bottle size.
- Store bottles upright at a suitable conditioning temperature until carbonated.
- Chill thoroughly before serving.
Do not rely only on airlock activity to confirm that fermentation has finished. Always use a hydrometer and ensure the specific gravity remains stable before bottling.
Bottling and Carbonation
