Product Description
The New World Ale Fresh Wort Kit – Keg King makes it easy to brew a fresh, hop-forward ale without completing a full all grain brew day. Produced on a Speidel 500L Braumeister Brewery, this professionally prepared wort is mashed, boiled and hopped before being packed ready for fermentation.
This beer is designed as an approachable session ale with plenty of modern hop flavour. Galaxy, Citra and Nelson Sauvin create a lively Pacific Rim profile, while the malt bill provides enough body and sweetness to keep the beer balanced. The result is a refreshing ale that delivers noticeable hop character without becoming overly heavy or bitter.
Each cube contains approximately 16.5 litres of wort. Add around 3 litres of clean water for the intended flavour balance and a final brewing volume of approximately 20 litres. Alternatively, ferment the wort undiluted for a fuller-bodied and potentially stronger beer.
Flavour and Aroma Profile
The hop character leads with citrus, tropical fruit and fresh fruit notes. Citra contributes grapefruit, lime and tropical flavours, while Galaxy adds passionfruit, peach and citrus. Nelson Sauvin brings distinctive white grape, gooseberry and subtle wine-like aromas.
Australian Ale malt and Pilsner malt provide a clean grain base. A small Crystal malt addition adds light caramel sweetness, extra colour and enough malt depth to support the hops.
At approximately 25 IBUs, the bitterness remains balanced and approachable. This makes the finished beer ideal for drinkers who enjoy modern hop flavour but do not want the aggressive bitterness of a stronger IPA.

Optional Dry Hop
The base wort already contains plenty of late-hop character, so dry hopping is not essential. However, you can add approximately 40 grams of Galaxy, Citra or Nelson Sauvin around three days before packaging for a stronger aroma.
Choose Galaxy for more passionfruit and tropical fruit, Citra for extra citrus and grapefruit, or Nelson Sauvin for bold white grape and gooseberry notes. You can also combine the varieties to create your own hop profile.
Avoid excessive dry-hop contact time, as this may introduce grassy or vegetal flavours.
Recommended Yeast Options
Suitable yeast choices include:
- Bluestone San Diego
- Fermentis SafAle US-05
- Mangrove Jack’s M42 New World Strong Ale
Bluestone San Diego and US-05 are ideal for a clean fermentation that allows the hop character to remain bright and expressive. M42 can provide strong attenuation and a crisp finish while still supporting the malt profile.
Always follow the yeast manufacturer’s pitching rate and temperature instructions.
Brewing Instructions
- Clean and sanitise your fermenter, lid, tap, airlock and all equipment that will contact the wort.
- Transfer the full contents of the fresh wort cube into the sanitised fermenter.
- Add approximately 3 litres of clean water for the recommended balance.
- Mix thoroughly and aerate the wort.
- Confirm the wort is within the correct pitching temperature range.
- Add your selected yeast and seal the fermenter.
- Maintain a stable fermentation temperature within the yeast manufacturer’s recommended range.
- Add approximately 40 grams of your chosen dry hops three days before packaging, if desired.
- Confirm fermentation is complete by checking for a stable specific gravity over consecutive days.
- Bottle or keg using properly sanitised equipment.
- Carbonate, condition and serve chilled.
Brewer’s Tips
Keep fermentation temperatures stable to encourage a clean yeast profile and preserve the bright hop character. Cold conditioning can improve clarity, smooth the bitterness and produce a more polished finish.
Minimise oxygen exposure when transferring or packaging the beer, especially if dry hopping. This helps protect the fresh citrus, tropical fruit and grape-like aromas.
