The Pale Ale Fresh Wort Kit – Mad Hopper Brewing gives homebrewers a simple way to produce a fresh, aromatic and balanced pale ale with minimal effort. Professionally brewed and packed fresh, this ready-to-ferment wort removes the need for mashing, sparging and boiling.
Each kit contains 17 litres of prepared wort. You can ferment it at the supplied volume for a richer result or add clean water to reach a final volume of up to 21 litres. With a target original gravity of approximately 1.056, the wort provides enough malt structure to support the hops while remaining refreshing and easy to drink.
This kit is suitable for new brewers who want a straightforward introduction to fresh wort brewing. It also suits experienced brewers who want reliable results without committing an entire day to brewing and cleaning.
Flavour and Aroma Profile
Expect a bright pale ale with lively citrus, floral and tropical fruit character. Centennial hops contribute grapefruit, lemon and light floral notes, while Citra adds lime, mango and other tropical flavours.
Magnum provides a smooth and clean bitterness that supports the late-hop character without adding harshness. The finished beer should offer a noticeable hop presence while remaining balanced by the malt base.
Pilsner malt creates a clean grain foundation. Wheat malt supports body and head retention, while Munich Light adds gentle bread, biscuit and light honey character. Together, these malts give the beer enough depth without making it heavy.

Recommended Yeast Options
Suitable yeast choices include:
- Fermentis SafAle US-05
- LalBrew BRY-97 West Coast Ale
- White Labs WLP001 California Ale
US-05 is a dependable choice for a clean fermentation that keeps the citrus and tropical hop character clear. BRY-97 also produces a crisp American-style profile with reliable attenuation.
WLP001 is ideal for brewers who prefer liquid yeast and want a clean, neutral fermentation with strong hop expression.
Always follow the pitching rate and fermentation instructions supplied by the yeast manufacturer.
Brewing Instructions
- Clean and sanitise the fermenter, lid, tap, airlock and all equipment that will contact the wort.
- Transfer the complete contents of the fresh wort kit into the sanitised fermenter.
- Add room-temperature water if desired to reach a final volume of up to 21 litres.
- Mix thoroughly and aerate the wort.
- Confirm the wort is within the recommended pitching range for your selected yeast.
- Pitch the yeast according to the manufacturer’s instructions.
- Maintain a stable fermentation temperature.
- Confirm fermentation is complete by checking for stable gravity readings over consecutive days.
- Cold crash and add suitable finings if desired.
- Bottle or keg using properly sanitised equipment.
- Carbonate, condition and serve chilled.
Brewer’s Tips
Maintain a steady fermentation temperature to encourage a clean flavour profile and preserve the fresh hop aroma. Large temperature changes may create unwanted yeast character.
Cold conditioning can improve clarity and help the bitterness, malt and hop flavours become smoother. However, avoid unnecessary oxygen exposure while transferring or packaging, as this can quickly reduce fresh hop character.
For a more aromatic beer, you may add a small dry-hop charge of Citra, Centennial or a combination of both near the end of fermentation. Dry hops are optional and are not included with the kit.
This pale ale pairs particularly well with:
- Burgers
- Barbecued meats
- Pizza
- Grilled chicken
- Fish and chips
- Tacos
- Seafood
- Salty snacks
