Designed as a classic Australian-style draught, this beer is light, balanced and perfect for serving ice-cold. Each cube contains approximately 16.5 litres of wort. Add around 3 litres of clean water to reach the intended brewing strength and a final volume of approximately 20 litres. After dilution, the expected starting gravity is around 1.054. Alternatively, you may ferment the wort undiluted for a richer, fuller-bodied and higher-gravity beer.
Flavour and Aroma Profile
Expect a pale golden beer with a clean grain character, light malt sweetness and a dry, refreshing finish. Joe White Pilsner malt forms the main base, creating a crisp flavour with subtle notes of fresh bread and grain.
Vienna malt makes up approximately 5% of the grist and adds gentle biscuit, toast and light honey notes. This small addition gives the beer enough malt depth to remain interesting without making it heavy.
Warrior hops provide approximately 20 IBUs of smooth bitterness. Hersbrucker hops contribute mild floral, herbal and gently spicy flavours that complement the clean malt profile.
The finished beer is balanced, easy to drink and best served very cold.

Optional Dry Hop
Dry hopping is not essential because the wort already contains a balanced Hersbrucker flavour. Keeping the recipe simple will produce a clean and traditional Australian draught-style result.
However, brewers who want a little more aroma may add approximately 40 grams of Hersbrucker hops to the fermenter three days before packaging. This optional addition can strengthen the beer’s floral, herbal and lightly spicy character without overpowering the malt base.
Avoid leaving the dry hops in contact with the beer for too long, as extended contact may introduce grassy or vegetal flavours.
Recommended Yeast Options
For a clean lager-style finish, suitable yeast choices may include:

- LalBrew NovaLager
- Fermentis SafLager S-23
- Mangrove Jack’s M84 Bohemian Lager
- Fermentis SafAle US-05
W-34/70 and NovaLager are excellent options for producing a clean, crisp lager profile. S-23 may add a little more fruit character, while M84 can create a traditional European-style lager finish.
US-05 may also be used when lager fermentation temperatures are difficult to maintain. It produces a clean ale profile that works well with the light malt and restrained hop character.
Always follow the pitching rate and temperature instructions supplied by the yeast manufacturer.
Brewing Instructions
- Clean and sanitise your fermenter, lid, tap, airlock and all equipment that will contact the wort.
- Transfer the complete contents of the fresh wort cube into the sanitised fermenter.
- Add approximately 3 litres of clean water for the recommended balance.
- Mix thoroughly and aerate the wort before adding yeast.
- Confirm that the wort is within the correct pitching temperature range.
- Add your selected lager or clean ale yeast.
- Seal the fermenter and maintain a stable fermentation temperature.
- Add 40 grams of Hersbrucker three days before packaging if you choose to dry hop.
- Confirm fermentation is complete by checking for stable specific gravity readings over consecutive days.
- Bottle or keg the finished beer using properly sanitised equipment.
- Carbonate, condition and serve ice-cold.
Brewer’s Tips
Ferment toward the cooler end of your chosen yeast’s recommended temperature range for the cleanest result. Stable temperature control will also help limit unwanted fruity or solvent-like fermentation flavours.
Cold conditioning after fermentation can improve clarity, smooth the bitterness and create a cleaner finish. When bottling or kegging, minimise oxygen exposure to preserve freshness.
